An enzyme that plays an important role in the nervous system, breaking down acetylcholine (a neurotransmitter) after it has been released into the synaptic cleft – the small space between nerve cells where communication occurs. It helps to end the signal between nerve cells, allowing the nervous system to reset and get ready for the next signal.
